Equipment

  • - Mixing bowls
  • - Grill pan or oven
  • - Blender or food processor
  • - Saucepan
  • - Skewers (if grilling)
  • - Knife and chopping board

Instructions

1.

Marinate the Paneer*
  • In a bowl, mix yogurt, lemon juice, ginger-garlic paste, turmeric, red chili powder, garam masala, mustard oil, and salt. Add paneer cubes and coat well. Cover and refrigerate for at least 1 hour.

2.

Grill the Paneer*
  • Heat a grill pan or preheat the oven to 200°C. Thread paneer cubes onto skewers and grill until golden brown and slightly charred. Set aside.

3.

Prepare the Gravy*
  • Heat oil or butter in a pan. Add bay leaf and chopped onions. Sauté until golden brown. Add ginger-garlic paste and cook until the raw smell disappears.

4.

Make the Masala Base*
  • Add tomato puree, turmeric, chili, coriander, cumin powder, and salt. Cook the mixture until oil starts to separate from the masala.

5.

Finish the Gravy*
  • Add cream and mix well. Add grilled paneer and garam masala. Simmer for 5–7 minutes. Adjust consistency with water if needed.

6.

Serve*
  • Garnish with fresh coriander. Serve hot with naan, paratha, or steamed rice.
